1 1/4 cups all purpose flour
1 stick unsalted butter (room temp)
4 to 5 ounces fresh grated Parmesean Cheese
1/2 tsp salt
1/2 tsp black pepper
In a mixer cream the butter until smooth. Add to the butter the flour, cheese, salt and pepper. The mixture should clump together like sugar cookie dough. If it appears dry add a small amount of water until it forms a dough. Once mixed remove from mixer and place on floured surface. Gentley form the dough into a log shape (not to big). Wrap the dough log in saran wrap and put in the freezer for 2 hours. Once chilled remove plastic wrap. Pre heat the over to 350 degrees. Slice the log into thin slices. Place on cookie sheet linedwith parchment paper. You can place them close to each other in the pan, they dont spread out. Cook for 10 to 12 min until golden then flip all crackers over and cook for about 5 more minutes. I find this makes them more crispy. Let cool and enjoy! (They kind of taste like cheeze its)
