2 pork chops per person (or more) Bone in is best.
whole milk
lard, Crisco, or oil for frying
salt & pepper
1. Heat your oil in a cast iron skillet(s)
2. Add the pork chops & cook on med heat til browned on one side.
3. Add ONE to 1 1/2 cups whole milk to frying pan .
4. Flip the chops, add salt & pepper.
5. Cook uncovered until milk evaporates leaving something that looks like scum. Let the scum brown in the remaining grease until crispy.
6. Plate the chops & put the skillet on the table (on a hot pad)
and dip your white bread in the grease & brown bits.
This is the way my daddy made pork chops & it is heavenly.
We often had pork chops for breakfast & just as often for dinner.
