Hash Brown Casserole (serves 6-8): Submitted by: Gee W. Los Angeles, Ca | Date Added: 23 Jan 2010

Ingredients

2 lb pkg. frozed hash browns (thawed)
1/2 c melted butter or margarine
1 t. salt (I use seasoned salt)
1/2 t. pepper
1 T. minced onion flakes
1 can cream of chicken soup
8 oz sour cream
2 c. grated velveeta or cheddar cheese

----------------------------------------------------------------------
Topping:
1/3 c. melted butter or margarine
2 c. crushed cornflakes

Cooking Instructions

1. Thaw the hash browns
2. Mix the next 7 ingredients then add the potatoes.

3. Place the mixture into a buttered or "Pammed" 9x13 casserole pan. ( I like the throw-away foil kind....especially if I'm taking this dish to a pot luck)

4. Combine the Topping Mixture & spread over the potato mixture. Cover with foil.

Bake at 350 degrees 45min then uncovered another 15 min.to brown.

This recipe is easily adapted to your taste. Some folks add fried & crumbled sausage or chorizo, hot or mild peppers, corn, muchrooms, etc.

It's great for home or a pot luck & the leftovers are great the next day too.
