3 slices of bacon - cut 1/2 inch pieces
1 15oz can corned beef hash
1/2 onion - diced
1 C. cheddar cheese - shredded
4 eggs
2 C. bisquick
1/3 C. milk
1/4 C. sour cream
Salt and pepper to taste
Optional: salsa and chopped green onions
Preheat oven to 375 degrees.
In large over-proof pan brown bacon till crispy then remove and drain bacon bits on paper towel.
Using the same pan with bacon drippings, cook onions at a medium heat till tender, then add hash breaking it up with a spoon and mix with the onions. With your spoon flatten the hash mixture in pan cooking till lightly brown (do not stir). Turn to low heat and top with cheese.
In small bowl combine bisquick, milk, sour cream and bacon bits mix to form dough. Drop dough with a spoon on top of cheese in the pan. Then add eggs, one at a time, salt and pepper. Bake for 10 minutes then check eggs to see if they are still slightly runny if so cook for an additional 5 minutes.
Remove from oven, let cool for 5 minutes, slice like a pie. If you want garnish with salsa and green onions.
